1. Heat the oven to 180C/gas 4. Tip all the dry ingredients into a large mixing bowl.
2. Melt the butter and pour over the dry mix. Then add the maple syrup and egg whites and mix everything together.
3. Use a spoon to place dollops of the dough onto a non-stick baking sheet, then smooth with the back of the spoon to form a cookie about 6cm big.
4. Place in pre-heated oven and bake for 10-15mins, or until lightly browned and cooked through.
